From the Globular State of Liquids to the Leidenfrost Effect

On June 4, 1826, Georges Sire was born. This French physicist occupies a special place in the history of our field of research.
A Thesis on the “Globular State of Liquids”
In 1862, Georges Sire defended a thesis entitled Étude sur la forme globulaire des liquides (Study of the Globular State of Liquids). Behind this now rarely used expression lies a phenomenon well known to specialists: what we now call the Leidenfrost effect.
At a time when experimental observation relied primarily on the scientist’s eye and a limited set of measuring instruments, Georges Sire sought to understand the unusual behavior of liquids exposed to high temperatures. His work was part of a broader scientific effort that gradually laid the foundations for our modern understanding of the interactions between liquids, vapor, and heated surfaces.

In the first and second, I examine the circumstances that may determine the globular form of liquids on hot surfaces, whether solid or liquid; and in the third, I study, as a particular case, the influence of this globular form on the temperature and evaporation of water.”

A Scientific Legacy That Remains Relevant Today
Revisiting these studies is a useful reminder: long before high-speed cameras, numerical simulations, and advanced characterization techniques, nineteenth-century researchers had already identified some of the fundamental questions that continue to drive scientific inquiry today.
Of course, the tools, concepts, and objectives have evolved considerably. Yet a clear continuity remains. The phenomena observed by Georges Sire are still at the heart of many contemporary investigations, including heat transfer, fluid dynamics, and interfacial phenomena.
Georges Sire’s work represents one of the early scientific accounts devoted to the globular state of liquids. It reminds us that the history of the Leidenfrost effect did not begin with modern observation techniques, but is rooted in a research tradition that stretches back to the nineteenth century. Even today, these phenomena continue to be studied in laboratories around the world.
On the anniversary of his birth, we would like to pay tribute to this physicist, whose work constitutes one of the historical milestones in the study of thermal levitation phenomena.
Science advances through the accumulation of knowledge, but also thanks to the women and men who first asked the questions. Georges Sire was one of them.
